COCONUT & RASPBERRY OVERNIGHT OATS

Summer porridge anyone? This refreshing recipe is perfect if you need to prepare your Purition the night before. No blender required! It’s super easy and tasty, too!

INGREDIENTS

  • 30g or 3 very heaped teaspoons Purition Coconut
  • 40g rolled oats
  • 40g fresh or frozen raspberries
  • 120ml milk/nut milk

INSTRUCTIONS

  • Mix the Purition, oats and milk together.
  • Stir half of the raspberries through the mixture.
  • Crush the remaining half of the berries to use as a ‘jam’ topping and set aside.
  • Pour the mixture into a serving jar or bowl.
  • Cover the mixture and leave in the fridge overnight.
  • When you're ready to serve, top your oats with the jam.

OPTIONAL EXTRAS

  • Add some roughly chopped nuts for extra crunch!
  • Add a spoon of coconut or Greek yoghurt.
