Quite possibly one of my favourite fish dishes, equally as tasty and enjoyable as a fish pie...
What you'll need
Enough protein and greens for however many you're feeding, I cook for 2.
Main ingredients
- Cod, one large piece or individual fillets
- Onion, 1x large
- Cream, about 200ml
- Grated cheese for topping
Fresh/ frozen
- Fresh dill, or 1 tsp dried
- Broccoli and/ or green beans
Store cupboard
- Olive oil
- Salt & pepper, to taste
What to do
- Slowly caramelise a finely sliced large onion in a dash of olive oil and a knob of butter. This takes around 15-20 minutes on a medium heat. If you're using dried herbs (dill or thyme work nicely) add them now.
- Add the fish, about 200-250ml of cream (single or double it doesn't matter), fresh herbs and grate some hard cheese over the top - whatever you have, Gruyere is nice. Add some salt & pepper and bake in the oven until cooked through.
- While it's cooking prep a side of your favourite greens. I used green beans and broccoli.
- Time to plate up!
Slowly caramelise the onion, 20 mins
Add cod, cream, herbs & cheese
Bake for about 20 mins, 180 fan
