Brussels Sprouts & Bacon

Recipe spoiler alert! This is possibly the best way to prepare Brussels sprouts. Enjoy as a side dish to your favourite choice of protein...

Make this vegan by swapping the bacon for chestnuts.

What you'll need

Enough for however many you're feeding, I cook for 2.

Fresh ingredients

  • Sprouts
  • Bacon

Store cupboard

  • Olive oil, 1-2 tbsp
  • Salt & pepper

What to do

1. Toss the sprouts in some olive oil and salt & pepper, spread them on a baking tray. 

2. Finely slice some rashers of bacon (I had a half pack of cubed pancetta that needed using up) and sprinkle on top.

3. Bake for around 35-40 mins at 200 degrees, mix them up half way through for maximum crispiness!

notes & tips

  • prep sprouts trim the stalky bottom bit off and remove any yellowy leaves. Cut them in half from top to bottom before tossing in olive oil.
  • vegan you can make this recipe vegan by swapping the bacon for roughly chopped roast chestnuts or hazelnuts!
