Dairy free pancakes

INGREDIENTS
- 20g or 2 very heaped teaspoons Purition Vanilla
- 1 large or 2 small very ripe bananas
- 3 dessert spoons rolled oats
INSTRUCTIONS
- Blitz the oats to make a smooth-ish oat flour
- Add the oat flour & Purition to a bowl
- Add enough mashed banana to bring the mixture together. If too dry add a splash of nut milk
- Melt a little coconut/ oil to a pan over a medium heat, add blobs of mixture to form pancakes
- Allow pancakes to cook on a low-medium heat, flip and cook the other side

- Top with mixed berries or a dollop of coconut yoghurt and a drizzle of maple syrup
