Dairy free pancakes

INGREDIENTS

  • 20g or 2 very heaped teaspoons Purition Vanilla
  • 1 large or 2 small very ripe bananas
  • 3 dessert spoons rolled oats

INSTRUCTIONS

  • Blitz the oats to make a smooth-ish oat flour
  • Add the oat flour & Purition to a bowl
  • Add enough mashed banana to bring the mixture together. If too dry add a splash of nut milk
  • Melt a little coconut/ oil to a pan over a medium heat, add blobs of mixture to form pancakes
  • Allow pancakes to cook on a low-medium heat, flip and cook the other side

  • Top with mixed berries or a dollop of coconut yoghurt and a drizzle of maple syrup
